Roasted Peach Tomato Salsa takes fresh summer peaches and garden tomatoes and intensifies their flavor into a roasted sweet and spicy salsa everyone will love! This quick roasted salsa is delicious with chips or spooned over fish tacos or rice bowls!

Ingredients

  • 1 peach
  • 2 to 3 tomatoes
  • ¼ cup red onion
  • 1 jalapeño pepper (or less)
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • 4 grinds fresh black pepper
  • ¼ teaspoon sugar (optional)
  • 1 Tablespoon lime juice
  • 1 Tablespoon cilantro

Instructions

  • Preheat oven to 425℉.
  • Slice the peach, tomato and onion into large chunks. Add to a sheet pan along with the whole jalapeño pepper. Use your hands to toss with olive oil, salt, pepper, and sugar if using.
  • Roast about 25 minutes until softened and caramelized.
  • Remove the stem and seeds from the roasted jalapeño pepper. You can use all of it or less depending on your heat preference.
  • Add all roasted ingredients and the cilantro and lime juice to a food processor or blender. Pulse the salsa so it keeps some texture, until it reaches the desired consistency.
  • Serve warm or refrigerate.

Notes

  • Tomatoes - Depending on size, you can use 1 to 3 of any variety of tomatoes you have.  Include some cherry tomatoes if you like!
  • Stretch this Recipe - add an extra peach or tomato.
  • Jalapeño Pepper is optional, use any amount you like depending on how spicy you want your salsa.
  • Sugar (Optional) - While the peaches contain plenty of natural sweetness, a touch of sugar added while roasting can enhance this flavor.  This salsa revolves around the sweet and spicy combination, so you can play these two elements up or down as you like.  You can taste your blended salsa and adjust with a pinch more sugar, salt, or jalapeño pepper until it tastes just right to you.
  • Yield - makes 1 cup of salsa.  Recipe could easily be doubled!
