Peach Caprese Salad

Peach Caprese Salad brings out the best in those summer ripe peaches! The classic caprese flavors with fresh mozzarella, cherry tomatoes and basil get a sweet and savory twist with fresh peaches and a honey balsamic dressing! The peach tomato combination is absolutely delicious and ready in just 15 minutes!

Ingredients

  • 3 peaches sliced
  • 8 ounces fresh mozzarella cheese sliced
  • 2 cups cherry tomatoes
  • 5 or 6 sprigs basil
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon honey

Instructions

  • Slice the peaches. Slice the fresh mozzarella and then cut the slices in half. Cut larger cherry tomatoes in half and leave some whole.
  • Arrange the salad in a circle around the edge of a platter with a slice of peach, then a slice of mozzarella and a basil leaf. Continue around in a circle, eventually filling in the middle. Tear mozzarella into smaller pieces as needed so you have an equal amount of peach slices and cheese.
  • Top the salad with lots of cherry tomatoes and more basil leaves to garnish.
  • Whisk together the olive oil, balsamic vinegar and honey and drizzle over the salad.

Notes

  • Ripe Peaches - Make sure to use ripe peaches for this recipe.  Leave them on the counter a day or 2 to ripen, they should be soft when gently pressed.
  • Make Ahead - Salad can be prepared a few hours in advance and kept in the fridge.
  • Portions - This salad can be adjusted larger or smaller to serve any number of people.  Just use an equal amount of peaches and mozzarella and top with as many cherry tomatoes as you like!  Even delicious just for 1 person for lunch!
