Two completely different salsas from almost the same ingredients!

Ingredients & Substitutions
Roasting a summer peach, even if it's a bit overripe, intensifies its sweetness and balances the usual salsa ingredients for bright bold flavor!
- Peaches - This is a summer recipe when peaches are in season! Make sure your peach is ripe, set them on the counter a day or two to ripe. If you've got peaches, try my Peach Caprese Salad and this Healthier Peach Crisp!
- Tomato - Use any combination of garden tomatoes you have on hand. You'll want about the same volume of peach and tomato.
- Red Onion - Sharp onion mellows when it's roasted and perfectly balances the sweet peaches. Any type of onion can be substituted.
- Jalapeño Pepper - The sweet peaches call for a kick of spicy! You can adjust the amount of heat to your liking, by roasting a whole jalapeño, or only using part of it.
- Lime - Bright lime juice adds a burst of freshness to the roasted ingredients, bringing it all together!
- Cilantro - Essential to salsa making, it's easy to grow cilantro from seed, and we use it all summer for homemade salsa!
- Olive oil, Salt and Pepper - These are all for the roasting process, seasoning the produce as it cooks.
- Sugar (Optional) - I listed sugar as optional because it is totally a personal preference. While the peaches contain plenty of natural sweetness, a touch of sugar added while roasting can enhance this flavor. This salsa revolves around the sweet and spicy combination, so you can play these two elements up or down as you like. You can wait until the end, taste and add a pinch more sugar, salt, or jalapeño pepper until it tastes just right to you.

Instructions
This salsa is quick and easy, just roast your ingredients, blend and eat!
Step 1 - Slice your tomatoes, peaches and onion into large chunks, leaving the jalapeño pepper whole.
Toss with olive oil, salt and pepper.
Step 2 - Roast at 425°F for about 25 minutes until your fruit and veggies are soft and caramelized.
Step 3 - Add your roasted ingredients to a food processor or blender. Remove the stem and seeds from the jalapeño pepper.
Add the cilantro and fresh lime juice.
Step 4 - Pulse the salsa, keeping some texture so it isn't totally smooth.
Serve your salsa still warm from the oven, or refrigerate.
Helpful Tips
- Use Ripe Peaches - Make sure your peaches are ripe and at their peek of sweetness! Even a bit overripe is fine for roasting. Set peaches on the counter for a day or two to ripen.
- Water in Tomatoes - Roasting at a high heat removes the water in the tomatoes. If you're using a larger tomato with a lot of water content, you may want to roast a little longer. Roma, plum and cherry tomatoes contain less water.
- Adjust the Amounts - You have lots of flexibility with this salsa! Go ahead and roast 2 or 3 peaches if you like more, or use more tomato. Make a double batch, use whatever variety of peppers and tomatoes are hanging out in the garden. This recipe is easy to make it your own!
- Make Ahead and Storage - This Peach Tomato Salsa can be stored in the fridge for about 3 days, or frozen for 3 months. It's delicious eaten still warm when the veggies are straight from the oven!

This salsa is not super spicy, but the heat level can be adjusted to your liking by adding more or less jalapeño pepper. The sweet and spicy combination is really good, but you can start with just a little spicy pepper, taste, and add in more if you like. You can add any kind of spicy pepper, or mini sweet peppers for a milder flavor!
Yes, you could grill the peaches, tomatoes, onion and jalapeño pepper in large pieces for a more char-flavored salsa. This would be similar and equally delicious!

- 1 peach
- 2 to 3 tomatoes
- ¼ cup red onion
- 1 jalapeño pepper (or less)
- 1 teaspoon olive oil
- ¼ teaspoon kosher salt
- 4 grinds fresh black pepper
- ¼ teaspoon sugar (optional)
- 1 Tablespoon lime juice
- 1 Tablespoon cilantro
Instructions
- Preheat oven to 425℉.
- Slice the peach, tomato and onion into large chunks. Add to a sheet pan along with the whole jalapeño pepper. Use your hands to toss with olive oil, salt, pepper, and sugar if using.
- Roast about 25 minutes until softened and caramelized.
- Remove the stem and seeds from the roasted jalapeño pepper. You can use all of it or less depending on your heat preference.
- Add all roasted ingredients and the cilantro and lime juice to a food processor or blender. Pulse the salsa so it keeps some texture, until it reaches the desired consistency.
- Serve warm or refrigerate.
Notes
- Tomatoes - Depending on size, you can use 1 to 3 of any variety of tomatoes you have. Include some cherry tomatoes if you like!
- Stretch this Recipe - add an extra peach or tomato.
- Jalapeño Pepper is optional, use any amount you like depending on how spicy you want your salsa.
