Ingredients & Substitutions
Incredibly simple, you won't believe the amazing flavors that come from this bunch of summer ingredients!
- Peach - Make sure your peaches are ripe! Set them on the counter a few days to ripen. Overripe peaches are great to make this Roasted Peach Tomato Salsa!
- Fresh Mozzarella Cheese - Classic caprese cheese, fresh mozzarella is the perfect taste and texture to add creaminess to all that produce. You could substitute fresh mozzarella pearls or crumbled feta cheese over the top.
- Basil - We grow lots of basil, and a leaf, or half a leaf in each bite is best for this salad! There's really no substitute for fresh summer basil!
- Cherry Tomatoes - Tomatoes and peaches are a match made in heaven! Plus they are both ripe and ready to all through August!
- Olive Oil, Balsamic Vinegar, Honey - This quick dressing is very minimal with just a tiny amount poured over the salad. The salad is so full of bold taste on its own, but just a little balsamic rounds out the caprese flavor!

Instructions
Just slice and assemble, this Peach Tomato Caprese Salad can be ready in 15 minutes!
Step 1 - Slice your peaches and larger cherry tomatoes in half, some can be left whole.
Slice the mozzarella and cut the slices in half. Mix up the dressing.
Step 2 - Arrange the salad in a circle around the edge of a platter with a slice of peach, a slice of mozzarella, torn smaller as needed, and a leaf of basil.
Continue around in circles until you have used all the peaches and covered the inside of the circle. Try to eyeball the cheese, tearing it into smaller pieces so you have enough for each peach slice.
Step 3 - Top the salad with cherry tomatoes, more basil for garnish, and drizzle with the balsamic vinaigrette.
Helpful Tips
- Adjust the Portions - This recipe doesn't need to be followed precisely. You can make it with just 1 peach for a quick side dish or light lunch for yourself, or make a large platter for a party. You can use more or less cherry tomatoes, depending on what you like!
- Arranged or Tossed- You can take the time to arrange the peach slices with the mozzarella in a circle, or just take all your ingredients and toss them rustically in a bowl.
- Make it an Appetizer! - You could take these same ingredients and skewer them for an easy appetizer! Or try these Peach Prosciutto Caprese Skewers.
- Tomatoes - You could even slice a whole tomato and layer it along with the peaches and mozzarella. I love the look of the cherry tomatoes, and if you can add a variety of red and yellow, even better!
- Make Ahead and Storage - This salad can be made up a few hours ahead of time and kept in the fridge. You can add the dressing right away or wait to add it when serving. It's also fine to let sit out a bit when serving since peaches, tomatoes and even the mozzarella can be served at room temperature. Store leftovers in the fridge and eat them the next day!

Like an avocado, a peach is ripe when it is soft when pressed but not mushy. You want to buy peaches in advance. Keeping them in the fridge will slow ripening, so set them on your counter a day or two before you need them to ripen. You simply can not make this Peach Caprese Salad with unripe peaches! We always have 6 or 7 peaches ripening on the counter all through August!
Yes, and it would be delicious! This salad uses a quick and easy drizzle of balsamic vinegar, olive oil and honey, but store-bought balsamic glaze achieves the same hint of flavor, a perfect substitute.

- 3 peaches sliced
- 8 ounces fresh mozzarella cheese sliced
- 2 cups cherry tomatoes
- 5 or 6 sprigs basil
- 1 teaspoon olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon honey
Instructions
- Slice the peaches. Slice the fresh mozzarella and then cut the slices in half. Cut larger cherry tomatoes in half and leave some whole.
- Arrange the salad in a circle around the edge of a platter with a slice of peach, then a slice of mozzarella and a basil leaf. Continue around in a circle, eventually filling in the middle. Tear mozzarella into smaller pieces as needed so you have an equal amount of peach slices and cheese.
- Top the salad with lots of cherry tomatoes and more basil leaves to garnish.
- Whisk together the olive oil, balsamic vinegar and honey and drizzle over the salad.
Notes
- Ripe Peaches - Make sure to use ripe peaches for this recipe. Leave them on the counter a day or 2 to ripen, they should be soft when gently pressed.
- Make Ahead - Salad can be prepared a few hours in advance and kept in the fridge.
- Portions - This salad can be adjusted larger or smaller to serve any number of people. Just use an equal amount of peaches and mozzarella and top with as many cherry tomatoes as you like! Even delicious just for 1 person for lunch!
